So Simple Oven Roasted Brussels Sprouts Recipe

I always thought I was one of those people who didn't like brussels sprouts, but I saw purple brussels sprouts come up as an option in my latest Imperfect Produce box, and I thought I would give them a try.  I kept noticing the most popular thing to do with brussel sprouts was to roast them, so I had to see... are they really that good roasted?  The short answer is YESOven roasted brussels sprouts are a serious game changer

There are quite a few different ways to flavor roasted brussels sprouts but since I got purple brussel sprouts, I wanted to just keep a basic recipe and try them for taste.  I thought they came out amazing just as they were, so I really have to say even though this is a 4 ingredient, super easy recipe, it's also very tasty and healthy too!  

For this recipe you will need 



Parchment Baking Paper

Cookie Sheet

Cutting board & Knife

Medium Bowl for tossing Veggies



1lb Brussels Sprouts (I used purple)

1 TBS Olive Oil

Dash Black Pepper

Dash Sea Salt (I used Himalayan Pink Salt)



Preheat the oven to 400 degrees, and rinse your sprouts with cold water.  


Cut about 1/4 inch off the base of each brussels sprout and remove the outer layer of leaves for freshness.  Then cut each brussel sprout in half.

After you've cut all your veggies up, put them in a medium sized bowl, add Olive Oil, Salt and Pepper to taste, and toss.  I personally feel like a little salt goes a long way if you are using Sea Salt (I love Himalayan Pink Salt) so be careful not to use too much.  Just a pinch will do.


Once your veggies are cut, tossed and ready to roast, lay them on a cookie sheet lined with parchment paper, and place them in the oven at 400 for about 20-30 minutes. 


About half way through roasting, gently shake the pan to give the veggies an even cooking all around.


Once they are a golden brown color to your liking, they are done! 

That's it!  See how easy that was?!


Brussels Sprouts are high in vitamin C, Vitamin A, and Iron, plus they are also high in fiber and have a fair amount of protein too!


I have some ideas of other ways to flavor these, and am excited to try them, but for now, if you are like me and thought you hated brussels sprouts, try these, and you might just realize it wasn't the brussel sprout that you didn't like, but perhaps the way they were prepared.  Who wants mushy steamed brussels sprouts?  Not this girl.  Roast them.  I promise.  Game changer.  For reals.  Plus I feel like signing up for the Imperfect Produce box has really inspired me to try new things, and add more veggies to my diet that I wouldn't have normally thought of.  If delivery service is available in your area, you should totally check out Imperfect Produce, I know you'll love it!
